Pineapple Whip

Have you ever tried pineapple whip at the state fair? Maybe at Disney World? Or maybe you've been blessed to try it at the actual Dole Plantation in Hawaii like we did last summer. Wherever it was, I am sure you remember how dreamy and sweet this treat was on your lips.

I decided to make a healthier version of the Dole Pineapple Whip. This recipe has only 4 ingredients which makes it super easy to remember. I find it funny (but not surprised) that the Dole version doesn't even have actual pineapple in it, just the juice.  My recipe is not fat free like the Dole soft serve but it lacks the long list of additives.

Here's the ingredients in the actual Dole Whip soft serve: 
water, sugar, dextrose, pineapple juice concentrate, coconut oil(trivial amount), stabilizers (cellulose, xanthan gum, locust bean, karaya gum, pectin) Maltodextrim, Silicon Dioxide (anticaking), Corn Syrup solids, Citric acid, sodium caseinate (a milk derivative), artificial flavor, potassium and sodium phosphate, mono and diglycerides, artificial color (yellow 5 and 6), soy lecithin

Pineapple Whip

Ingredients:
  • 1 1/4 cup(approx.) frozen vanilla coconut milk *see notes (I used So Delicious brand)
  • 1 cup(approx.) ripe fresh pineapple, cubed 
  • 1/2 cup pineapple juice, chilled
  • 1/8 tsp {all natural} stevia (optional)
Place all ingredients in a high speed blender and blended until it turns to a creamy consistency. Serve immediately.

NOTES:  Coconut ice cream is very pricey.  I decide to try freezing coconut milk in ice cube trays and using them in the whip. It worked and saved a lot of money. A small pint of coconut ice cream can cost $6-7. I used one whole tray of coconut milk ice cubes. 

Another tip I suggest is, after cutting the fresh pineapple you put it in the freezer for a hour to make it super cold. It's important that all ingredients are either frozen or chilled. If you choose to use coconut ice cream you can probably substitute out equal amounts.

I'm guessing this would make an awesome cocktail! Just add some rum or vodka.
